Hurrah for springtime!
To be honest, I don’t really like spring!!! You’re probably wondering why I said hurrah then and what’s not to love about springtime? Before I tackle the reason why I don’t particularly love spring let me say first that winter is not my favorite either. So, I do not dislike spring because I love winter, nope, that’s not the case at all. In fact, I’m no fan of winter either. I am originally from a tropical country located right by the equatorial region with summer pretty much the entire year except for some occasional showers and storms here and there. So, let me say this – I am a summer kind of gal!
The reason why I don’t particularly enjoy spring is due to the fact that spring also means allergy season for me (and I guess for many, too!). May is particularly bad! If I don’t take flonase (free ad!), then I’d be such a disaster with weepy eyes, itchy throat, runny nose, and occasional bouts of headaches, too! So, I am not a huge fan of Spring. I love the green beauty surrounding me but I just wish they weren’t slowly trying to kill me! Haha.
But that is not to say, there isn’t anything lovely about spring! Thankfully, the Lord has kindly blessed us with so many delicious fruits that come out particularly in springtime as if to make up for the allergy season! We have mangoes, kiwis, and oranges galore – just to name a few. And of course, for me, the most popular spring fruit – strawberries!!! Yay for Spring! Because of strawberries, I can still say hurrah for spring!
I love, love, love strawberries! You know why? Because this is a fruit I am actually quite familiar with even when I was back in the Philippines, because, guess what? We actually grow strawberries in my tropical country! Not by the sandy white beaches of course, but in the highlands of the Philippines, the mountainous region called Mountain Province in the north. Come March to May, you can pick strawberries up the mountainside in the northern Philippines! Our strawberries are not as big as the ones in the west, they’re smaller in size but packs in a lot of sweetness and flavor! Now, I am suddenly missing strawberries from Baguio City – the summer capital of the Philippines!
Which brings me to this post – a delicious and crazy easy recipe for strawberry sauce. I love a good strawberry sauce and I must say this is one good and very reliable recipe for a versatile strawberry sauce or topping. You pretty much need only 3 ingredients – how’s that for easy?
Strawberries (naturally).
Sugar (for added sweetness).
Lemon (for extra tang!).
And since no additional water or any other ingredient, it comes out so tasty and concentrated in taste with just the right balance of sweetness and tang!
It also thickens as it cools down so there’s no need to add any cornstarch or other thickener. It’s just simply good on its own!
And the uses for this sauce are countless – as topping for cakes (especially cheesecake), ice cream, pancakes, waffles, pavlova and so much more! In fact, you can also use this as a jam! It’s that good and versatile!
This recipe is perfect for our Strawberry Cheesecake as you can see here.
Easy 3-Ingredient Strawberry Sauce or Topping
Ingredients
- 1 pound strawberries, hulled and coarsely chopped
- 1/3 cup white sugar
- zest of 1 lemon
- juice of 1/2 lemon, or to taste
Instructions
- To make the sauce, in a small saucepan combine the strawberries, sugar, lemon zest and juice and cook over medium-high heat, stirring occasionally. Cook until the fruits begin to break down and release their juices at the same time mashing a few berries to help in the process. Continue to cook until the sauce thickens roughly 10-12 minutes or to your desired consistency. The sauce will continue to thicken as it stands. Leave to cool completely before using. Store in the refrigerator if not using right away. Enjoy!

This looks SO delicious and perfect to top cheesecake! Can’t wait to try it!
DELICIOUS! And those pics are amazing! The jam glistens and shines! Summer mood – on!
How long will it keep in the fridge? TIA!
5-7 days it should be good.
Will it turn out ok without the “extra rang”?
Did you mean extra tang? Are you referring to the lemon? The lemon is needed to up the flavor but the amount to use is up to you. Add more or less. I wouldn’t entirely leave it out.
Can I use frozen strawberries? I have a lot of them!
Yes you can certainly. They may not hold their shape as much as the fresh ones (if you want a chunkier sauce) and may be a bit mushy but other than that it should be ok.
Can you freeze it
Yes, allow it to cool completely first before freezing in an airtight container. Simply thaw when you need to use it.
Can you just use lemon juice and if so how much ?

Lovely and easy! I used frozen strawberries and it worked beautifully; I did add a cornstarch slurry to compensate for the extra liquid from the frozen berries. This was perfect for the banana split bar we did for my son’s birthday.
So glad it worked for you! Thank you so much for stopping by!
Any tips for making this with artificial sweetener versus sugar?
I have never tried this with artificial sweetener so I’m not sure it would work. I don’t know how it will thicken without using regular sugar. Might be worth researching online to see if it’s possible. If it is, then it’s worth a try.
