Easy Creamy Corn Dip (aka Crack Corn Dip)

This easy and creamy corn dip (also known as Crack Corn Dip) is a type of dip or spread made with canned Mexican-style corn, cheese, sour cream, mayonnaise, chilies, and green onions. The ingredients are typically mixed together and served cold though sometimes baked or heated until the cheese is melted and bubbly. This dip is often served with corn chips as a snack or appetizer for game day, during holidays, summer potlucks, picnics, or other special events.

Once a month we meet with the young couples from our church either at our place or at another family’s residence. It’s called the YAMS (Young and Married) and we have a topical discussion of certain themes and issues that young couples often have to deal with.

It’s both a time of fun fellowship and a way to help young couples (and sometimes singles, too) learn something about married life. If you know our church, any gathering like that would mean food, lots of food!

It’s like a potluck. We ask everyone to bring something to share – usually appetizer or snack-type food. It was in one of our YAMS gathering that I brought this delicious creamy corn dip! I was pressed for time and I didn’t want to fuss over something difficult to prepare.

This easy creamy corn dip came to my rescue at the right time! It’s simply a case of mixing ingredients (none of them need any extensive prep either, yay!) together and then, voila, a yummy creamy dip!

I first saw this dip when I shared this on my Facebook page. Based on the comments I got from the post, it seemed like a very popular appetizer that everyone raved about. That gave me the idea, I needed to make this soon!

Thankfully, I was presented with this opportunity when the YAMS fellowship came along. I can attest that this is such a yummy dip so all the comments and feedback I got were correct! I am so glad that I discovered this and now this would be often on our menu for any party, potluck or gathering!

After all, it won’t be called “crack” if it wasn’t delicious and it truly was!

The origin of this creamy corn dip is not clear and is likely to have evolved over time through various cultural influences and individual adaptations. However, dips and spreads made with corn as a base ingredient have been a staple in various cuisines, including Mexican and Tex-Mex, for many years. The addition of cheese and other ingredients to create a creamy texture is a relatively recent development and has become increasingly popular as a snack or appetizer in the United States and beyond.

Whoever may have created this, I just want to say thank you!!!

CAN THIS EASY CREAMY CORN DIP BE MADE AHEAD?

Yes! I actually made this dip another time and served it the next day for another fellowship meal (this time for the whole church). It actually tasted even better as the ingredients were able to fully combine and their flavors developed even more overnight.

Also, the dip thickens as it sits so when it’s prepared ahead, there’s no worry that you’d have a thin liquidy dip. At any rate, this wasn’t that. It has perfect consistency.

WHAT CAN I SERVE WITH THIS EASY CREAMY CORN DIP?

Though this is traditionally served with corn chips like Fritos, there are others you can serve it with too.

Creamed corn dip is typically served with a variety of dippers such as:

  • Tortilla chips
  • Vegetables such as carrots, celery, and bell peppers
  • Crackers
  • Bread slices or baguette
  • Pretzels
  • Pita chips

Feel free to get creative and try different dippers to find what you like best!

DO YOU RECOMMEND EASY CREAMY CORN DIP?

YES! Not only because it is delicious but because it’s so easy to make. I serve this cold but it may be heated in the oven too. Add the cheese last and then allow it to melt in the oven.

It is also quite customizable if you wish to adapt it to your tastebuds. In my case, I added some bell peppers and cilantro to the mix (though not always included in other similar recipes) because they lend a pop of color but help enhance the flavors, too. I suggest adding them when you make the dip, too.

WHAT ARE THE INGREDIENTS FOR AN EASY CREAMY CORN DIP?

  • 3 cans fiesta corn or Mexicorn, drained
  • 1 (10 oz) can Rotel (reg or hot), drained
  • 1 (6 oz) can diced jalapeno, drained
  • 2 cups shredded cheddar,
  • 5 green onions (about 1/2 cup), sliced
  • 1 cup mayonnaise
  • 1 cup sour cream
  • 1/2 bell pepper, finely chopped
  • Fresh cilantro leaves, chopped

HOW DO YOU MAKE EASY CREAMY CORN DIP?

  • Mix all the ingredients except for the bell peppers and cilantro in a bowl.
  • Stir to evenly combine.
  • This can be made a day ahead. Simply refrigerate until you’re ready to serve. Add the finely chopped bell peppers just before serving. The dip will thicken as it sits in the fridge.
  • Season with a little ground pepper, salt, and even a little sugar (1/2 a teaspoon) to further enhance its flavor as desired.

NOTES

Other recipes don’t necessarily include bell peppers and cilantro but I added them not only for a nice pop of color but for the flavors they add, too.

  4. It is August in Wisconsin and that means one thing…fresh sweet corn. We had some leftover ears from dinner last night and have a picnic this afternoon so I went looking for a recipe. This one grabbed my eye. We cut the kernels off of three cobs. We also have fresh jalapeños from the garden so I used three of them. I mixed the red pepper and cilantro throughout and then added a little more cilantro to the top for garnish. This dip is FANTASTIC! I know my family will all flip out over it. Perfect blend of sweet and heat. Thank you for the recipe it will be a staple going forward every summer.

    1. Hi Kathy, it makes a lot because it’s meant for a crowd and for parties. Unfortunately, because of the mayonnaise, cheeses, and sour cream in the recipe – if you freeze, it won’t have the same consistency when you thaw it because of the liquid content. Sorry.
