Slow Cooker Pulled Pork with Salsa Verde
So easy to make – simply dump the salsa verde with the spices and seasonings plus the pork loin, and what comes out of the slow cooker is one tasty meat dish. This Slow Cooker Pulled Pork with Salsa Verde is perfect for super tasty tacos and burritos!
My family loves Mexican food and we have it at least once or twice a week. Although Mexican food is pretty reasonably priced we cannot afford to buy it all the time as we would be bankrupt!
So for us, the only way to satisfy our cravings for tacos, burritos, and enchiladas would be if Mom (that’s me!) makes some and feed her hungry family!
We have a few staples that we repeat on occasion but this time I wanted to try something new and different that we haven’t tried yet. I have seen online and on Pinterest certain recipes that call for the use of salsa verde to flavor meat as it cooks.
I thought it was pretty easy to make especially if done on the slow cooker as it’s simply dump-and-cook and most of all it can be made friendly to low-carb diet, if desired.
It was a win-win situation for me – I have a new dish to try and it’s completely gluten-free and lower in carbs. Exactly what my hubby likes!
I decided to use roast pork for this one because I already have made a chicken version previously. I tweaked this slightly so it’s not exactly the same.
It came out so tasty and moist! If you haven’t tried cooking meat with salsa verde yet, then now is your chance – it is absolutely worth it, especially because there’s hardly any effort involved!
With the use of the slow cooker, it’s perfect for busy moms, too! Enjoy!
We love to have this with some sour cream, fresh chopped cilantro, tomatoless corn salsa (we love Trader Joe’s), sometimes with extra cheese on the side plus a squeeze of lime or lemon juice. The combination of all that is a gustatory delight!

What are the INGREDIENTS for Slow Cooker Pulled Pork with Salsa Verde?
- Pork loin roast or pork shoulder – trimmed of excess fat, if preferred
- Salsa Verde – use homemade or bottled store-bought variety (I use the bottled one for convenience and since I have a good brand that I like I preferred to use that).
- Onion – chopped.
- Bay leaves – use either fresh or dried.
- Ground Cumin
- Chili Powder
- Garlic cloves – peeled and crushed.
- Sugar – this is not to sweeten the dish but enhance the overall flavor.
- Salt and Pepper – adjust the amount to taste.
How do you make Slow Cooker Pulled Pork with Salsa Verde?
- Place the chopped onions at the bottom of the slow cooker. Mix together the salsa verde, garlic cloves, ground cumin, ground chili, salt, and a little sugar (optional if making this low-carb). Place the pork loin on top of the onions and pour over the mixture. Insert the bay leaves. Cover and let cook for 6-7 hours on low or until the pork is fully cooked. Taste and adjust seasoning with extra salt and pepper, if desired.
- Uncover and shred the pork with a fork. Serve over tortillas as part of your tacos or burritos with some sour cream, cheese, fresh chopped cilantro, lime, or lemon wedges plus corn salsa on the side. This is delicious with cilantro rice, too!
NOTES:
For more depth of flavor, try to brown the pork loin over medium-high heat in a skillet first. Simply, rub it with some salt and pepper before frying.
The spices may also be quickly heated by dry-stir-frying the ground cumin and chili powder until aromatic in order to release their flavors. Alternatively, simply use the skillet where you browned the pork. Scrape all the spices and brown bits once done and mix this with the salsa verde as instructed above.

Ingredients

- 3 lbs pork loin roast or or boneless pork shoulder
- 16 oz bottle salsa verde use homemade or bottled store-bought variety (I use the bottled one for convenience and since I have a good brand that I like I preferred to use that)
- 4 cloves garlic peeled and minced
- 1 tbsp ground cumin
- 3/4 tbsp chili powder
- 1 tsp salt or to taste
- 2 tsp brown sugar this is used not to sweeten the dish but enhance the overall flavor
- 2 Bay leaves either fresh or dried.
- Ground Pepper to taste.
Instructions
